Preparation
There are four critical steps to ensure that you enjoy our quality seafood at the highest level - Purchasing, Storage, Preparation/ Cooking, and Serving. One of the myths about seafood is that it is difficult or complicated to prepare. On the contrary, you can enjoy a delicious and healthy seafood meal in less than 30 minutes.
Purchasing
When purchasing seafood, especially fresh fish, the smell test is very important. If a fish smells “fishy” it is most likely not good. Some fish, such as salmon or sole, may have a distinct aroma, but it certainly should not be overbearing. We guarantee that our fish is fresh and of the highest quality. The flesh of quality fish should be uniform in texture and color, and not dried out. The highest quality fresh fish is normally good for consumption up to 7-9 days out of water, assuming it had been stored and handled properly. The fish at Robert’s Seafood Market is normally 1-2 days out of water by the time we receive and/or ship it.
Storage
It is critical to keep your fresh or frozen seafood purchase at the proper temperature to maintain the highest quality. Keep fresh fish in your refrigerator between 34 – 39 degrees. If purchased in the store, remove the butcher paper and replace with plastic wrap if not using within 24 hours. Our frozen seafood is flash frozen to seal in the freshest quality product. Keep frozen product in the original package at temperatures below freezing to prevent moisture build-up and a re-thawing process. Most properly frozen seafood should store easily 3-6 months.
Preparation / Cooking
To get the true flavor of your seafood purchase, we recommend minimal use of marinades or rubs. After you’ve discovered the flavor of a specific species of fish, you can experiment with different flavors. We recommend just a pinch of salt & pepper and either clarified butter or light olive oil when cooking fish. Cooking time is critical. You want to cook your seafood a little less, rather than a little more. Many a good fish has been ruined by overcooking. Use a medium heat and cook at the least time that you still enjoy your fish. Many recipes you will find have cooking times that are way too long. Even if the temperature is lower, the cooking time will dry out your seafood. If your fish becomes flaky then it has cooked too long.
Presentation
After you’ve invested in our quality piece of seafood, you want to ensure that you present it properly. Try and time your entrée to be served as soon as it is ready. Most accompaniments, such as a starch or green vegetable will warm fine until your primary seafood dish is ready. White wine is always a good compliment to most seafood, but red is certainly acceptable.
