      Of all the proteins people cook for themselves, seafood is the
one that they prepare the least of at home...why?  Many incorrect
myths exist regarding seafood preparation.  The first is that
cooking fish in your home will create "fishy" odors.  That may be
true if you are not using the freshest seafood.  Good quality fish
should never have a strong or "bad" odor.  Only bad fish has bad
odors.  Fresh fish may have an aroma that defines the species of
fish, such as sole or cod and you should always have a hint of the
freshness of the sea.

We recommend the following starter tips to ensure
your seafood tastes incredible every time!
  • Choose your seafood from a reputable source (choose us!!!!)
  • Most fresh seafood should be prepared or consumed within 48 hours
    of the purchase date for the highest quality taste and flavor
  • It is crucial to keep all refrigerated seafood at the required
    temperatures until prepared.  Unwanted heat dramatically reduces
    the quality (we'll provide you ice at no charge to ensure your
    purchase stays fresh all the way home).
  • Always give your fresh fish a quick rinse under cool water after
    taking it out of the butcher wrapper and before cooking the fish.  
    Paper is great to wrap your fresh seafood in for transportation, but is
    not intended to stay there for more than 48 hours.  A quick rinse
    reduces any chance of bacterial pick-up from the paper.
  • We recommend olive oil, grapeseed oil, or clarified butter when
    cooking your seafood.  These oils also have a higher "smoke" point
    and will allow your fish to cook at higher searing temperatures
    without burning the fish.  We recommend one of our heart healthy
    oils, if at all possible.  Add a dash of salt & pepper to taste.
  • For "basic" preparation, most fish should be baked for 10 minutes at
    400 degrees in a conventional oven.  If grilling, cook for 4 to 5
    minutes each side.  Start with the "flesh" side down (skin side
    facing you) when grilling.  We can recommend cooking times for
    specific types of species as well as cooking methods.  The key is not
    to over cook the fish.  Overcooking is usually the primary reason
    people do not appreciate the great flavors of fish.
