Grilled Coconut Shrimp
Ingredients
1 Lb Jumbo Raw Shrimp
1 can Coco Lopez (cream of coconut)
3 or 4 tablespoons chopped garlic
½ teaspoon white pepper
½ teaspoon salt
2 tablespoons coriander
Directions
- Combine all ingredients, except shrimp
- Peel and devein jumbo shrimp
- Stir together peeled and deveined shrimp with other ingredients. Marinate for 4 hours to overnite.
- Preheat grill to medium heat.
- Grill shrimp for approximately 3 to 3 ½ minutes per side or until āCā shaped. Serve when done

3-4 people (6-8 shrimp per person)

Shrimp Newburg
Ingredients
¾ teaspoon salt
1 pinch cayenne pepper
1 dash nutmeg
2 cups cream
3 tablespoons dry sherry
2 egg yolks, lightly beaten
2 cups peeled and cooked shrimp (about 1 ½ to 2 pounds in shell)
Directions
- In a medium saucepan, add cream ā cook and then reduce by half.
- Gradually add sherry; cook until thickened and smooth, stirring constantly.
- Stir about 1/3 of the hot sauce into the egg yolks, then pour the egg yolk-sauce mixture into the remaining sauce in the saucepan.
- Add shrimp and heat through, stirring constantly.
- Serve in pastry shells or over rice.
