Grilled Coconut Shrimp

Ingredients
1 Lb Jumbo Raw Shrimp
1 can Coco Lopez (cream of coconut)
3 or 4 tablespoons chopped garlic
½ teaspoon white pepper
½ teaspoon salt
2 tablespoons coriander


Directions
  1. Combine all ingredients, except shrimp
  2. Peel and devein jumbo shrimp
  3. Stir together peeled and deveined shrimp with other ingredients. Marinate for 4 hours to overnite.
  4. Preheat grill to medium heat.
  5. Grill shrimp for approximately 3 to 3 ½ minutes per side or until ā€œCā€ shaped. Serve when done

3-4 people
(6-8 shrimp per person)

Shrimp Newburg

Ingredients
¾ teaspoon salt
1 pinch cayenne pepper
1 dash nutmeg
2 cups cream
3 tablespoons dry sherry
2 egg yolks, lightly beaten
2 cups peeled and cooked shrimp (about 1 ½ to 2 pounds in shell)


Directions
  1. In a medium saucepan, add cream – cook and then reduce by half.
  2. Gradually add sherry; cook until thickened and smooth, stirring constantly.
  3. Stir about 1/3 of the hot sauce into the egg yolks, then pour the egg yolk-sauce mixture into the remaining sauce in the saucepan.
  4. Add shrimp and heat through, stirring constantly.
  5. Serve in pastry shells or over rice.
